Fuel My Friday: Tuscan Potatoes

The latest in our Fuel Me Friday Series is a perfect side for a summer Barbecue - Tuscan Potatoes. They are quick, tasty and approved by our nutritionists.

Tuscan potatoes (serves two)

Ingredients 

500g potatoes (around the size of an egg)

1 clove of garlic

Rosemary

1 teaspoon of olive oil

Salt and pepper

Method

1. Cut the potatoes in half, leaving the skins on and put in a saucepan

2. Cover with cold water and bring to the boil over a high heat.

3. Reduce heat to medium, partially cover then leave to cook for 15 to 20 minutes

4. Meanwhile chop the rosemary and garlic finely

5. Once the potatoes are cooked drain off the water, return to the pan and turn off the heat.

6. Add in the rosemary, garlic, olive oil and seasoning and stir until evenly coated.
